This is a quick salad or side dish. It works great with grilled meats.

Ingredients:

1 teaspoon Garlic chopped
4 Tomatoes , chopped large
2 cans Black Olives Whole
1 1/2 cups Provolone Cheese (cubed) or feta cheese (crumbled)
3 tablespoons Balsamic Vinegar or Red Wine vinegar
3/4 cup Olive Oil
1 teaspoon Italian Seasoning
Salt to taste
Pepper to taste
3 Cucumbers sliced

Directions:

1. Dressing: In a small bowl combine vinegar, olive oil, Italian seasoning, salt, and pepper.

2. Whisk together and set aside.

3. In a large bowl, toss the vegetables, cheese and dressing together.
