2 Eggs Large Hard Cooked, **
1 Teaspoon Salt cayenne pepper
2 Teaspoons Ground Ginger or equivalent fresh minced
5 1/2 Cups All-Purpose Flour chilled
4 Teaspoons Ground Cinnamon or more
1 1/3 Cups Molasses light or dark
Cup Shortening soft +
2 Teaspoons Baking Soda in milk
Cup Brown Sugar packed

1. Mix brown sugar,shortening and molasses.

2. Stir in remaining ingredients.Cover and refrigerate at least 1 hour.

3. Heat oven to 375 degrees.Roll dough 1/2" thick on a lightly floured cloth covered board.

4. Cut into desired shapes with cookie cutters.Place about 1" apart on lightly greased cookie sheets.

5. Bake until no indentation remains when touched,about 7 to 8 minutes;cool.

6. Frost and decorate as desired.Makes 5 dozen 3" cookies.
