Mexican Churros

Ingredients:

3 Eggs Large Hard Cooked, **
1/4 Teaspoon Salt cayenne pepper
2 Cups Canola Oil or extra-virgin
1 Cup All-Purpose Flour chilled
1 Cup Water or milk
1/2 Cup Margarine soften
1/4 Teaspoon Ground Cinnamon or more
1/4 Cup Sugar brown, packed

Directions:

1. Heat water, margarine and salt to rolling boil in 3-quart saucepan.

2. Stir in flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute.

3. Remove from heat. Beat in eggs all at once and continue beating until smooth.

4. Heat oil to 1-1/2 inch depth in heavy skillet to 360 degrees.

5. Spoon the dough into a decorator's tube with large star tip for authentic looking churros.

6. Squeeze 4-inch strips of dough into hot oil. Fry 3 or 4 strips at a time until golden brown, turning once; about 2 minutes on each side.

7. Drain. Mix sugar and cinnamon in brown paper bag.
