Mingle Mangle (Warm Zucchini Salad)

Ingredients:

1 Tablespoon Butter or margarine
1/4 Teaspoon Hot Sauce
1 Teaspoon Lemon Juice fresh
Cup Heavy Cream
1 Teaspoon Red Wine Vinegar
2 Shallots minced
1/4 Cup Fresh Basil chopped plus 1TB
3/4 Pound Zucchini 1/8inch slices
2 Tomatoes peeled,seeded,cubed

Directions:

1. Melt the butter in a large heavy skillet over medium heat.

2. Add the shallots; cook 1 minute.

3. Add the cream and 1/4 cup basil.

4. Heat to boiling; reduce the heat.

5. Simmer, stirring occasionally, until thick, about 10 minutes.

6. Add the lemon juice, vinegar, hot pepper sauce, and salt and pepper to taste.

7. Stir in the zucchini and toss it until well coated.

8. Add the tomatoes; toss lightly.

9. Sprinkle with the remaining 1 TB basil. Serve immediately.
