Nougat Glace with Passion Fruit

Ingredients:

1/3 Cup Sugar
1/4 Cup Water
2 Eggs whites
3 Tablespoons Grand Marnier Liqueur
5 Passion Fruit
3 Cups Heavy Whipping Cream or creme fraiche
2 Tablespoons Candied Oranges peel chopped

Directions:

1. Dissolve sugar in water and cook stirring until sugar is dissolved.

2. Cook to a heavy syrup. While it's cooking, whip egg whites until they form soft peaks.

3. ( I do it in my electric beater) Now start pouring the hot syrup into the whites, always beating.

4. Keep whipping until cool. Stir in the orange rind.

5. Whip the cream in a bowl over a bowl of ice to make a chantilly.

6. Add the Grand Marnier and fold it into the cold meringue.

7. Line an oblong loaf cake pan ( medium size) with parchment in such a way that it overlaps the edges.

8. Spoon mixture into prepared pan and tap it against the counter.

9. Cover with the paper that is hanging to the outside.

10. Freeze. Make a very light syrup with the 3 T sugar and water.

11. Stir in the pulp and seeds of the passion fruit.

12. Chill. Reheat before serving. About 45 minutes before serving, unmold ice cream and leave it in the refrigerator.

13. Serve topped with the warm sauce. Any other fruit sauce is great over this dessert.

14. You can add ground nuts to the ice cream,instead of the orange rind.
