Oatmeal Sandwich Cookies

Ingredients:

8 Eggs at room temperature
3/4 Cup Water Boiling
3 Eggs whites
3 Cups Butter or margarine
3 Teaspoons Vanilla
2 Teaspoons Salt to taste
4 Teaspoons Baking Powder
6 Tablespoons Milk
1 1/2 Cups Shortening
8 Cups Brown Sugar
8 Cups Oatmeal
4 Teaspoons Cinnamon Ground
8 Cups Flour unsifted
8 Teaspoons Soda dissolved in:
3 Cups Confectionery Sugar or more

Directions:

1. Mix together brown sugar and butter, then add eggs and mix well. Mix together dry ingredients and add alternately with soda water.

2. Drop by teaspoon on cookie sheet.

3. Bake at 375F for 10-12 minutes, or until done.

4. Filling: Beat egg whites until stiff, add vanilla, milk and sugar.

5. Cream shortening and add to mixture.

6. Spread on cooled cookie, cover with second cookie to make sandwich.
