One-Pan Potatoes & Chicken Rosemary

1 1/3 lb Potatoes (4 medium) cut into 1/4-inch slices
1 lb Chicken Breast (boned and skinned)cut into 1/2-inch strips
2 Garlic cloves minced
2 tablespoons Olive Oil
2 teaspoons Dried Rosemary crumbled
Salt to taste
Pepper to taste

1. Place potatoes in shallow 1 1/2- to 2-quart microwave-safe dish.

2. Cover with plastic wrap, venting one corner.

3. Microwave on HIGH 8 to 10 minutes until just tender.

4. While potatoes cook, in large nonstick skillet over high heat, toss and brown chicken and garlic in oil 5 minutes.

5. Add potatoes and rosemary; toss until potatoes are lightly browned.

6. Season with salt and pepper.

I do not recommend this recipe. Chicken and potatoes turn out really dry and bland.
