Open Faced Pita Sandwich

Ingredients:

1/4 cup Carrot julienned
1/4 cup Zucchini julienned
1/4 cup Mushroom sliced
1/4 cup Onion julienned
1/4 cup Bell Pepper julienned
Salt to taste
Pepper to taste
4 teaspoons Mustard prepared
2 Pita Bread
4 Tomatoes slices

Directions:

1. Preheat oven to 375 deg. Saute vegetables in water or steam until tender. Drain and season to taste.

2. Spread thin layer of mustard on top of whole, split pita. Top with vegetables and tomato slices.

3. Toast lightly for 5 minutes. Serves 2.
