Directions:
1. Dissolve the brown sugar, cream and bicarbonate of soda in a saucepan over medium heat, stirring constantly until it comes to the boil.2. Boil the mixture, without stirring, until it becomes a thick syrup and will form into a medium/soft ball when a little is dropped into cold water.3. Remove the pan from the heat and add the butter, nuts, orange rind and salt.4. Beat until the mixture becomes thick. Turn out into a buttered 8 in square tin and, when cold, cut into pieces.
