Orange Caramel Fudge

Ingredients:

1 1/2 cup Dark Brown Sugar
1/2 cup Cream
1/2 teaspoon Baking Soda
1 1/2 teaspoons Butter
1/2 cup Walnut chopped
1 Orange finely grated rind
1 pinch Salt

Directions:

1. Dissolve the brown sugar, cream and bicarbonate of soda in a saucepan over medium heat, stirring constantly until it comes to the boil.

2. Boil the mixture, without stirring, until it becomes a thick syrup and will form into a medium/soft ball when a little is dropped into cold water.

3. Remove the pan from the heat and add the butter, nuts, orange rind and salt.

4. Beat until the mixture becomes thick. Turn out into a buttered 8 in square tin and, when cold, cut into pieces.
