Orange Parsnips

Ingredients:

1 Teaspoon Sugar scant
1/2 Cup Orange Juice chilled
1 Dash Bell Pepper bell
1/4 Teaspoon Salt optional
1 Pound Parsnip peeled and sliced 1/4-inch thick

Directions:

1. In saucepan combine parsnips, orange juice sugar, salt and pepper; bring to a boil.

2. Cover and cook for 5-10 minutes, or until tender.

3. Remove from heat and sprinkle with orange peel.

4. Serves 4-6. Microwave method: Combine all ingredients except orange peel in 1 1/2-quart glass casserole.

5. Cover with waxed paper and cook on HIGH for 14 minutes, stirring 3 times.
