Yum! This recipe is very simple to make (it's a classic Muffin!) but it taste so good for breakfast or for breaking the day :) I suggest to do both the quantity 'cause all family and friends will need a bis!

Ingredients:

1 cup Buttermilk
1 Egg beaten
1/3 cup Butter melted
1 teaspoon Vanilla
1 cup Whole Wheat Flour
1 teaspoon Baking Soda
1 cup Oats quick cooking
1/2 cup Brown Sugar
1 cup Carrot finely shredded
1 Orange grated rind
2 teaspoons Baking Powder
1 teaspoon Salt

Directions:

1. Preheat oven to 375 degrees.

2. Prepare pans. Pour buttermilk over oats in a bowl.

3. Add beaten egg, melted butter, sugar, vanilla and rind and mix thoroughly.

4. Combine dry ingredients and add to wet mix until just combined.

5. If desired, raisins may be added at this point.

6. Spoon into pans and bake for 15 to 20 minutes or until done.
