Oven Roasted Shrimp Toasties

This is a fairly simple recipe and is great if you happen to have some leftover shrimp from a party or plan on buying some, anyway. It's a basic bruschetta with the addition of a few key ingredients to give it a little kick.


1/4 cup Fresh Basil finely chopped
5 Garlic cloves finely diced
1 Green Onion diced
4 Plum Tomatoes diced
1 tablespoon Olive Oil
20 Shrimp medium size cooked, chopped and peeled
2 tablespoons Mayonnaise
1 Egg white (binds while cooking)
1 teaspoon Old Bay Seasoning
1 French Baguettes Loaf

1. Take a nice roll of skinny baguette, sliced into the thin 1/3 inch thick-or-so pieces you see above.

2. Toast that in the oven at 350 F for about 8-10 minutes, depending on how brown you like your bread.

3. Mix the ingredients well until everything is coated with the mayo/egg/seasonings. Your bread's probably done by now, I'm sure. I like to flavor the toasted bread a bit by taking a clove of garlic, dipping it in olive oil, and scraping it across the top of the bread, but it's not really necessary.

4. Place a spoonful of the shrimp mixture on each piece and put them back into the oven at the same temperature for another 10 minutes. That egg white should bind the mixture together on the bread so it won't spill all over the place when you're cramming them in your drooly gob.
