6 Carrots peeled, sliced
1 Onion chopped
1 Tablespoon Olive Oil or as needed
2 Cloves Of Garlic minced (up to 2)
1/2 Pound Spaghetti or Rice
1 Cup Vegetable Broth hot

1. Preheat oven to 350 degrees.

2. Combine carrots, onion, olive oil and garlic in a small bowl, then spread on a baking sheet.

3. Bake for 45 minutes, stirring twice, until golden and tender.

4. Meanwhile, cook pasta according to package directions; drain.

5. Puree roasted vegetables with vegetable broth in food processor or blender.

6. Toss with hot pasta. Serve immediately. Serves 2.
