1. Preheat oven to 375 F. Combine sugar, brown sugar, butter and peanut butter in a large bowl.
2. Mix with an electric mixer until light and fluffy. Add the egg, vanilla and salt.
3. Continue mixing until all ingredients are mixed well. In a separate bowl, mix the flour and baking soda and then slowly mix the flour mixture into the rest of the ingredients already mixed.
4. Keep mixing with the electric mixer for about 1 or 2 minutes. Using your hands, shape the dough into 1-inch balls. (If dough is too soft, refrigerate for 30 minutes.)
5. Roll balls in 1/4 cup sugar. Place the balls about 2 inches apart on ungreased cookie sheets and bake for 8 to 10 minutes or until golden brown.
6. While the dough is cooking, unwrap all of the chocolate candies and when the dough is done and comes out of the oven, immediately press 1 chocolate candy in the center of each cookie.
7. Remove from cookie sheets and cool completely on wire racks.
