Herb-Crusted Beef Tenderloin with Horseradish Sauce ... Sprinkle with salt; rub with mustard, then season with pepper, rosemary, and thyme.


1 Tablespoon Pepper coarsely ground
1 1/2 Teaspoons Fennel Seeds crushed
1/2 Teaspoon Cayenne Pepper ground
1/8 Teaspoon Nutmeg ground
1/8 Teaspoon Mustard dry
1/8 Teaspoon Garlic Powder (opt)
1/8 Teaspoon Onion Powder
5 Pounds Beef Tenderloin

1. Combine spices in a small bowl; set aside.

2. Trim fat from tenderloin; rub with pepper mixture.

3. Place tenderloin on a rack coated with cooking spray; place rack on a broiler pan.

4. Insert meat thermometer into thickest portion of meat.

5. Bake at 375* for 50 minutes or until thermometer registers 140* (rare) to 160* (medium).

6. Place tenderloin on serving platter; cover and let stand 10 minutes.

7. Cut into thin slices and serve with Horseradish Sauce.
