Pork Chops In Onion Sauce

Ingredients:

4 Pork Chops center cut
1/2 Teaspoon Salt (non iodized)
1/4 Teaspoon Pepper hot red
1 1/2 Tablespoons Unbleached Flour (up to 3)
1 1/2 Tablespoons Vegetable Oil 45 Ml
4 Onions small (2 med) *
1/2 Cup Beer or ale
1/2 Cup Beef Broth hot
1 Teaspoon Cornstarch (optional)

Directions:

1. Season pork chops with salt and pepper; coat with flour.

2. Heat oil in a heavy frypan. Add pork chops; fry for 3 minutes on each side.

3. Add onions; cook for another 5 minutes, turning chops once.

4. Pour in beer and beef broth; cover and simmer 15 minutes.

5. Remove pork shops to a preheated platter. Season sauce to taste.

6. Blend cornstarch with a small amount of cold water.

7. Stir into sauce and cook until thick and bubbly.

8. Pour over pork chops. Blend cornstarch with a small amount of cold water.

10. Pour over pork chops. Serve with brussel sprouts and boiled potatoes.
