Ingredients:

1/4 Cup Vegetable Oil 1.5 TB
1 Teaspoon Dried Thyme Leaves
2 Cups Tomatoes chopped (up to 4)
1 Onion sliced
3 Potatoes peeled and sliced

Directions:

1. Heat the oil in a large skillet on medium heat.

2. Add the potatoes and onion and saute for 10 minutes.

3. Add the tomatoes, salt, pepper, thyme and cayenne.

4. Bring to a boil, then reduce the heat, cover and simmer for 30 minutes, or until the potatoes are tender and the sauce has thickened.
