1) Remove skin from potatoes
2) Chop potatoes into small to medium chunks
3) Boil potatoes for approximately 40 minutes or until ready to be mashed
4) Preheat oven to 350 degress
5) Mash potatoes in large boil until smooth
6) While mashing, add desired amount of milk until smooth
7) Add butter
8) Add sour cream to taste
9) Add locatelli cheese to taste
10) Add mozzerella cheese to taste (only about 1/2 - 3/4 pound in order to save some for the end!)
11) Add sausage to taste
12) Pour mixture into a 9 X 13 glass baking dish
13) Use remaining mozzerella cheese to create a thin layer of cheese on top of the potato mixture
14) Place baking dish in over and bake for approximately 45 to 60 minutes (or until cheese begins to brown
15) Remove and let cool 15 minutes before serving
