Prawn Curry

This is a non-spicy curry but still full of flavor.

Ingredients:

1 tablespoon Vegetable Oil
1 Shallot , finely chopped
1 Garlic , minced
1 1/2 tablespoons Curry Powder
2 tablespoons Flour
2 cups Coconut Milk (can be replaced with evaporated milk or cream)
1 1/2 tablespoons Lemon Juice
2 lbs Shrimp p ns , peeled and deveined
1 tablespoon Cilantro , chopped

Directions:

1. Heat the oil in a large saucepan or skillet.

2. Add shallot and garlic and cook for about 5 minutes until fragrant and softened.

3. Add curry powder and cook for about 1 minute, next stir in the flour and cook for another minute.

4. Remove from heat and stir in coconut milk, mix until smooth.

5. Return to heat and stirring constantly until sauce thickens.

6. Simmer for 2 minutes then stir in the prawns.

7. Continue to simmer for approximately 5 minutes or until the prawns turns opaque.

8. Lastly, turn off heat, stir in the lemon juice and cilantro.
