Pumpkin Scones

The butter combined with the pumpkin makes for a seriously sumptuous dish - just remember to have a scone tray handy before beginning.

Ingredients:

1 tablespoon Butter
1/2 cup Sugar
1 Egg
2 cup Self-Raising Flour
1 cup Pumpkin cooked and mashed
1/8 teaspoon Salt

Directions:

1. Grease a scone tray or baking tray.

2. Cream together the butter and sugar until light and fluffy.

3. Add egg and beat well.

4. Add pumpkin, flour and salt and fold in by hand.

5. Knead lightly and cut into 1-inch squares.

6. Place close together on the scone tray and bake at 425 degrees F. until well risen and golden on top (about 15 minutes).

7. Serve hot, with butter.
