These are yummy and fun cupcakes for any birthday or special dessert!

Ingredients:

3 1/2 cups All-Purpose Flour
1 1/4 teaspoons Baking Soda
1 1/4 teaspoons Salt
1 1/4 teaspoons Unsweetened Cocoa powder
1 1/2 cups Vegetable Oil
2 1/4 oz Sugar granulated
1 1/4 cups Buttermilk
3 Eggs
2 tablespoons Red Food Color plus 2 teaspoons
1 1/4 teaspoons Apple Cider or vinegar (white or can both work)
1 1/4 teaspoons Extract Of Vanilla
1/8 cup Water
1 1/2 lbs Cream Cheese , room temperature
1 lb Butter room temperature
2 lbs Confectionery Sugar
1 tablespoon Extract Of Vanilla

Directions:

1. Cupcake: Preheat the oven 350 degrees F.

2. Mix flour, baking soda, salt, and cocoa powder into a bowl and set aside.

3. Mix oil, sugar, and buttermilk with an electric mixer until combined.

4. Add eggs, food coloring, vinegar, vanilla and water and mix well.

5. Slowly add the dry ingredients previously mixed.

6. Mix just until ingredients are combined.

7. Line 1 large cupcake tin or 2 smaller cupcake tins with paper liners, scoop the batter into the liners and bake at 350 degrees F for 20 to 30 minutes or until the toothpick comes out clean.

8. Let cool.

9. Cream Cheese Frosting:

10. Using an electric mixer, whip the butter and cream cheese together until creamy.

11. Slowly add the powdered sugar to the mixture.

12. Add the vanilla and mix until combined.

13. Once the cupcakes are cool, frost them with the cream cheese frosting.
