This is a simple but elegant dessert for a dinner party or for after an afternoon game of bridge. Serve with the proper style of a small plate and paper doily.
Ingredients:
2 cups Red Wine good-quality cooking
1 cup Water
1/4 cup Orange Juice
1 cup Sugar
1 Vanilla Bean
4 Cloves
6 Pepper black
2 Pears slightly firm peeled, cored, and left whole
1. Combine the red wine, water, orange juice, sugar, vanilla bean, cloves, and peppercorns in a medium sauce pot and place over medium heat.
2. Add the pears and simmer slowly until just tender when pierced with a toothpick or small knife; the exact timing will depend on ripeness of the pears.
3. Remove the pears from the liquid and set aside to cool.
4. Place chopped nuts in a small saute pan and toast over high heat until lightly browned and fragrant, about 2 minutes.
5. Strain the poaching liquid.
6. Return it to the sauce pot and cook over medium-high heat until reduced to a light syrup.
7. Meanwhile, divide the cheese into four parts and roll each piece into a small ball.
Keep in a cool place.

) Cut each pear in half and place on dessert plates.
8. Arrange two balls of cheese on each plate and pour a few spoonfuls of syrup around the pears.
9. Sprinkle hazelnuts over the pears and serve.
