Rice and Beans With Cheese

This rice, bean, cheese mixture is great for dipping chips or spreading over crackers. Try different beans or rice for an enhanced flavor and texture.

Ingredients:

1 1/3 cups Water
2/3 cup Long Grain Rice
1 cup Carrot Shredded
1/2 cup Green Onion Sliced
1 teaspoon Instant Bouillon Cube
1/2 teaspoon Cilantro Ground
1/4 teaspoon Salt
1 teaspoon Hot Sauce Hot
15 oz Navy Beans drain
1 cup Low Fat Cottage Cheese
8 oz Low Fat Yogurt Plain
1 tablespoon Fresh Parsley Snipped

Directions:

1. In a large saucepan combine water, rice, carrots, green onions, bouillon granules, coriander, salt, and bottled hot pepper sauce.

2. Bring to boiling; reduce heat. Cover and simmer for 15 minutes or till rice is tender and water is absorbed.

3. Stir in pinto or navy beans, cottage cheese, yogurt, and parsley.

4. Spoon into a 10x6x2" baking dish. Bake, covered, in a 350 deg F.

5. oven for 20-25 minutes or till heated through.

6. Sprinkle with cheddar cheese. Bake, uncovered, for 3-5 minutes more or till cheese melts.
