Rich Tea Biscuits

Ingredients:

1 Tablespoon Baking Powder
2 Cups Flour sifted, all-purpose
1 Teaspoon Salt to taste ;
Cup Milk cold
1 Egg beaten (optional)
1/3 Cup Shortening melted

Directions:

1. Preheat oven to 450~.

2. In medium bow, mix flour, baking powder, and 1 teaspoon salt.

3. With pastry blender or two knives, cut in shortening until mixture resembles coarse crumbs.

4. With fork, stir in milk just until mixture forms a soft dough and leaves side of bowl.

5. On lightly floured surface with floured hands, knead dough 10 times.

6. Pat dough 3/4 inch thick. With floured round cookie cutter (3 1/2"), cut out as many biscuits as possible.

7. Place biscuits, about 1/2 inch apart, on large cookie sheet.

8. Press dough trimmings together; pat and cut as above.

9. Brush biscuits with beaten egg. Bake 12 to 15 minutes until golden.
