Roasted Sweet Potato Fries

2 Yams drained (23 ounces)
2 Tablespoons Olive Oil or lard
1/2 Teaspoon Curry Powder mild yellow
1/4 Teaspoon Ground Cumin Seed * used rounded 1/4t

1. Preheat the oven to 425 F.

2. Cut each potato horizontally into 1/2" slices.

3. Then cut each slice into sticks, to resemble big french fries.

4. Combine sweet potatoes and remaining ingredients in a bowl, tossing gently to combine.

5. Place the fries, in a single layer, on a baking sheet sprayed with non-stick cooking spray.

6. Bake for about 25 minutes, or until tender and golden.

7. Toss the fries often to promote even browning.
