Salmon with Red Pepper and Ginger Sauce

Ingredients:

1/3 Cup Heavy Cream plus
3 Tablespoons Butter Or Vegetable, 3 Tbl
1/4 Cup White Wine dry
1/2 Teaspoon Fresh Ginger coarsely chopped
1 Red Bell Pepper chopped (optional)
1 Shallot chopped
2 Fillets Of Salmon (7 oz)
1 Tangerine squeezed, juice and peel reserved

Directions:

1. Saute salmon slowly, on med.

2. heat in 1 T of the butter. Remove and keep warm.

3. Add remaining butter and slowly saute shallots, ginger and pepper until tender, about 3 minutes Add wine and tangerine juice, bring to a boil.

4. Transfer sauce to a blender and liquefy; return to pan, add cream and reduce to sauce consistency.

5. Salt and pepper to taste. Transfer salmon to serving dish and pour sauce over.
