Directions:
1. Divide sausage into 6 equal portions and flatten into patties large enough to encase the hard-cooked eggs.2. Place one egg in the center of each patty and mold the meat around the egg.3. Lightly beat the raw egg in a medium-side bowl.4. Roll each sausage-encased egg first in beaten egg and then in bread crumbs, firmly pressing the crumbs into the meat.5. In a medium-to-large pot, heat oil to 375 degrees F and deep fry the egg for 4 to 6 minutes.6. Drain on paper towels and chill until serving time.
