Ingredients:

2 Tablespoons Olive Oil or lard
1 Teaspoon Garlic finely chopped
2 Cups Tomatoes peeled and seeded
1/2 Can White Wine dry
1/4 Cup Basil fresh, chopped
1 Teaspoon Oregano dried
1 1/2 Pounds Shrimp fresh, devained
1/8 Teaspoon Flakes Red Pepper to taste
1/2 Pound Feta Cheese crumbled(4 oz.)

Directions:

1. Heat 2 tablespoons of the oil in a skillet and add the garlic.

2. Cook briefly, stirring, and add the tomatoes.

3. Cook about 1 minute and add the wine, salt, and pepper.

4. Add the basil and oregano. Cook over moderate heat about 10 minutes.

5. Heat the remaining 3 tablespoons of oil in a large skillet and add the shrimp.

6. Cook quickly, about 1 minute, just until shrimp turn red.

7. Stir as they cook. Sprinkle with red pepper flakes.

8. Preheat oven to 400F Spoon the shrimp and any pan juices into a small baking dish.

9. Sprinkle the shrimp with the crumbled feta cheese and spoon the tomato sauce over.
