Shrimp Quesadillas

These are not only easy, but a great twist on a basic recipe. It is also easy to adjust and add any other favorite stuffings.

Ingredients:

4 Flour Tortillas
1 cup Monterey Jack Cheese Shredded
1/2 cup Shrimp Coarsely chopped cooked
1/4 cup Green Onion Thinly sliced
1 tablespoon Cilantro Finely chopped

Directions:

1. Sprinkle half of each tortilla with cheese, shrimp, onions, and cilantro.

2. Fold tortillas into halves.

3. Cook in lightly greased skillet over medium heat until golden on both sides. Cut each tortilla into 4 wedges.
