4 Pounds Brown Sugar divided
7 Pounds Peaches halves
1 Quart Vinegar cider or wine
1 Teaspoon Cloves whole
1 Tablespoon Cinnamon stick
1 Teaspoon Allspice whole

Directions:

1. Tie spices in a bag and add to the vinegar.

2. Bring to a boil and stir in the sugar. Scald and peel peaches leaving them whole.

3. Drop peaches, a few at a time, into spiced liquid and cook until soft.
