Spiced Pineapple

Ingredients:

2 Pineapples green tops intact
1/4 Cup Orange Juice chicken stock or low-sodium chicken stock
40 Grams Butter melted (up to 1)
2 Tablespoons Brown Sugar divided
1 Teaspoon Cinnamon stick

Directions:

1. Peel and slice pineapples, and remove the cores using an apple corer.

2. Place slices into a non-metalic dish. Combine the remaining ingredients and pour over the pineapple.

3. Cover and refrigerate for 1 hour, longer if possible.

4. Barbecue or pan fry the pineapple slices over a moderate heat for 3-4 minutes or until pineapple slices are heated through.

5. Serve pineapple slices immediately with ice cream and garnished with shredded orange rind.
