Spicy Corn Ragout

Ingredients:

1 Red Bell Pepper diced small
1/2 Red Onion diced small
1/4 Teaspoon Pepper Ground
2 Tablespoons Chicken Broth unsaltd
2 Cups Frozen Corn (up to 1)
1 Clove Of Garlic minced
1/3 Cup Fresh Basil chopped
2 Tablespoons Jalapeno Peppers chopped
10 Ounces Spinach trimmed and chopped

Directions:

1. Heat oil in large, deep skillet or Dutch oven.

2. Add garlic and onion. Cook gently until tender and fragrant, but do not brown.

3. Add red peppers, and jalapenos. Cook for 5 to 10 minutes.

4. Stir in corn and mix together well. Add stock and bring to a boil.

5. Cook gently for 5 minutes. Stir in spinach and cook for 5 minutes longer, just until wilted.

6. Add pepper, salt, if desired and basil. Taste and adjust seasonings, if necessary.
