2 Tablespoons Fresh Parsley
1/2 Teaspoon Oregano dried leaf
2 Tomatoes chopped
2 Cloves Of Garlic minced
10 Mushrooms sliced
1 Cup Cottage Cheese
3 Tablespoons Vegetable Oil
1/2 Teaspoon Basil
1/2 Teaspoon Rosemary
8 Ounces Mozzarella Cheese Grated
1/2 Cup Parmesan Cheese Grated
1/2 Pound Lasagna Noodles
1 Onion chopped
1 Pound Spinach Washed

1. Cook noodles till al dente. Drain & set aside.

2. Preheat oven to 350F. Heat oil in a large skillet & saute onion, garlic, tomatoes & mushrooms.

3. When onion is translucent, add herbs.

4. Chop the spinach & add to the skillet & stir till it is wilted. Simmer.

5. Reserving 1/2 c mozzarella, in a large bowl combine the cheeses.

6. Pour vegetables into the cheese mixture & mix thoroughly.

7. Layer noodles alternately with the vegetable-cheese in an 8x13-inch baking pan.

8. Top with reserved mozzarella & bake for 30 minutes.

9. Let sit for 5 to 10 minutes before serving.
