Spinach Salad with Bacon, Dates, And Feta Dressing

Ingredients:

1/3 Cup Feta Cheese (about 2 ounces)
1 Tablespoon Fresh Lemon Juice or to taste
2 1/2 Tablespoons Water boiling
1 Tablespoon Mayonnaise (+more if needed)
2 Tablespoons Olive Oil or lard
3 Slices Bacon chopped
1 Bunch Fresh Spinach (about 3/4 pound),
1/2 Red Onion sliced thin
1/3 Cup Dates chopped

Directions:

1. Make feta dressing: In a blender blend together feta, lemon juice, water, and mayonnaise until smooth.

2. With motor running add oil and blend until emulsified.

3. In a small skillet cook bacon over moderate heat, stirring, until crisp and transfer with a slotted spoon to paper towels to drain.

4. In a large bowl toss together spinach, bacon, onion, and dates with feta dressing.
