Spinach and Apple Salad with bacon Dressing

Ingredients:

1 Tablespoon Vegetable Oil 1.5 TB
1 Teaspoon Brown Mustard
2 Tablespoons Cider Vinegar or sweet and sour sauce
1 Onion diced (optional)
1/4 Teaspoon Salt to taste ;
1/8 Teaspoon Pepper Ground
1/2 Teaspoon Sugar brown, packed
4 Slices Bacon (up to 8)
10 Ounces Fresh Spinach torn in bite sized pieces
1 Apple cored and thinly sliced

Directions:

1. Place spinach in large bowl.

2. Cook bacon in large skillet over medium high heat until crisp.

3. Remove to paper toweling to drain. Discard all but 3 Tablespoons drippings from skillet.

4. Add oil to drippings in skillet and heat. Add onion; cook until tender, about 3 minutes.

5. Stir in vinegar, mustard, sugar, salt and pepper.

6. Bring to boiling. Remove from heat. Add apple to spinach.

7. Pour hot dressing over spinach and apple; toss well to coat.

8. Crumble bacon and sprinkle over salad. Serve immediately.
