Sri Lanka Brinjal Moju (Eggplant Moju)

250 Millilters Vegetable Oil vegetable
450 Grams Eggplants cut 1/2" thick
2 Cloves Of Garlic slightly crushed
1/2 Teaspoon Turmeric to taste
150 Grams Shallots (Not spring onions)
1 Teaspoon Salt to taste ;
1 Teaspoon Sugar brown, packed
100 Grams Bell Peppers green
1 Teaspoon Mustard Seed ground
50 Millilters Vinegar cider or wine
3 Slices Ginger finely grated

1. Slice the eggplant and green pepper length ways clean the shallots, crush the garlic and shred the ginger.

2. Heat the oil and fry eggplant slices until browned.

3. Remove, drain and set on one side. In the same oil lightly fry the Bell peppers, green and shallots and when soft drain and set on one side.

4. Pour off most of the oil and add garlic, ginger, vinegar, salt, turmeric and mustard to the pan and cook for 2 - 3 minutes.

5. Add the eggplant slices, green pepper and shallots and cook for a further 5 minutes.
