This recipe brings out the taste of Caribbean of style cooking. The prep time for this recipe is quick.

Ingredients:

4 Boneless Rib Eye Steak 1-inch thick
4 Cloves Of Garlic
1 1/2 teaspoons Ground Cumin Seeds
1 teaspoon Cilantro
1/4 teaspoon Salt
1/8 teaspoon Ground Red Pepper
1 teaspoon Orange peel of
1 teaspoon Butter melted
2 Bananas firm
2/3 cup Long Grain Rice
2 tablespoons Bell Peppers finely chopped, sweet red
1/2 cup Black Beans cooked (or canned, rinsed and drained)
2 tablespoons Lime Juice

Directions:

1. Preheat grill. Trim fat from steaks.

2. Combine garlic, cumin, coriander, salt, and ground red pepper. Reserve 1/4 tsp spice mixture for rice.

3. Brush both sides of steaks with 1 tbsp of lime juice.

4. Sprinkle spice mixture evenly over steaks; rub in with fingers.

5. Combine the remaining 1 tbsp lime juice , orange peel and melted margarine.

6. Brush on both sides of bananas and set aside. Cook rice according to package directions in lightly salted water along with add reserved spice mixture.

7. Stir in beans and red sweet pepper to cooked rice; heat through.

8. Place steaks on grill and close lid.

9. Cook 4-6 minutes for medium-rare, 6-8 minutes for medium.

10. When done remove steaks from grill, cover and keep warm.

11. Add bananas to the grill and close lid. Grill until heated through, about 4 minutes.

the amount of coriander is not mentioned in the recipe as instructed to use in the 2nd step of the directions.
