1 Tablespoon Vegetable Oil vegetable
1 Tablespoon Oyster Sauce
10 Chicken Wings tips removed (and saved for stock!)
2 Slices Fresh Ginger peeled and grated ( 1/2 tsp dried ginger can be substituted)
1/4 Pound Smoked Ham cubed (8 oz)
1 Tablespoon Water (you may need more)
1/4 Teaspoon Salt to taste ;
1 Tablespoon Cornstarch ;
1 Tablespoon Soy Sauce light
1 Teaspoon Sugar brown, packed

1. Chop off bony wing tips with a cleaver; then disjoint wings and slip out bones.

2. Mince smoked ham; stuff into wing cavities. Arrange wing sections on a heatproof dish.

3. Steam 40 minutes (see "How-to Section"). Drain wings and let cool, then rub with soy sauce.

4. Heat oil. Add wings, a few at a time, and deep-fry until golden.

5. Drain on paper toweling; keep warm. Mince ginger root; then combine in a cup with water and the second quantity of soy sauce.

6. In another cup, blend cornstarch, oyster sauce, sugar, salt, the remaining water and soy sauce to a paste.

7. Heat remaining oil. Stir in ginger-soy combination 1 minute over medium heat.

8. Then stir in cornstarch paste to thicken. Add deep-fried wings only to reheat.
