2. Combine cornstarch, sugar, sherry, soy sauce and oil.
3. Add to beef and toss to coat. Shred celery lengthwise; then cut in 1-1/2 inch lengths.
4. Peel but do not crush garlic. Combine remaining cornstarch and sugar with water and pepper.
5. Heat oil. Rub pan with garlic clove until garlic turns brown; then discard.
6. (Hold garlic with chopsticks or fork). Add celery and stir-fry a few times to coat with oil.
7. Stir in stock and heat quickly. Cook, covered, 2 minutes over medium heat.
8. Remove celery and liquid from pan. Heat remaining oil.
9. Add beef and stir-fry until it begins to brown.
10. Return celery and liquid, stir-frying to reheat and blend flavors.
11. Stir in cornstarch mixture to thicken. Serve at once.

I worked in an asian resteraunt. the main chinese chef told me the secret to making beef and celery. add (Yang Jiang brand) Preserved Black Beans With Ginger. Also, when holding the celery hold it on its side, and cut the celery at like a ten degree angle, it should look like long horseshoes.
