Directions:
1. Slice pork thin against the grain.2. Add soy sauce to pork and toss. Slice cucumbers thin, but do not peel.3. Heat oil. Add pork and stir-fry until it begins to brown (about 3 minutes).4. Add cucumbers and salt; stir-fry 1 to 2 minutes.5. Then cook, covered, over medium heat until done (about 1 to 2 minutes more).6. Sprinkle with sesame oil and serve at once. VARIATION: Use 1 cucumber and 1/2 cup bamboo shoots, sliced thin.
