Stuffed Mushrooms

One of the best tasting stuffed mushrooms that I have ever had. Healthy alternative to other recipes that I have made.

Directions:
1. Thaw spinach, then drain well by squeezing excess liquid from it.2. Meanwhile, spray a cold 15x10x1-inch baking pan with nonstick coating.3. Set baking pan aside. Remove stems from mushrooms.4. Set tops aside. Chop enough mushroom stems to make 2 cups.5. In a 10-inch skillet cook chopped mushroom stems, onion, and garlic in margarine until onion is tender but not browned.6. Add thawed spinach. Cook over low heat until most of the liquid is evaporated.7. Stir Parmesan cheese, bread crumbs, pimiento, basil, oregano, salt, and pepper into spinach mixture.8. Spoon mixture into mushroom tops. Place stuffed mushroom tops in the prepared baking pan.9. Bake in a 425 degree F oven for 10 to 15 minutes or until mushrooms are tender.
