Sugar-Crusted Parsnips

Ingredients:

1 Pound Parsnip grated
2 Tablespoons Butter (softened)
1 Tablespoon Sugar brown
1/4 Teaspoon Salt (non iodized)
1/8 Teaspoon Pepper black

Directions:

1. Wash and scrape parsnips; cut into julienne strips.

2. Cover and cook in a small amount of boiling water five minutes or until tender; drain well.

3. Melt butter in a large skillet; add brown sugar, and stir until blended.

4. Add parsnips; cook over medium heat about two minutes, stirring constantly, until parsnips are glazed.
