Sweet And Sour Green Beans

Ingredients:

3 Slices Bacon 3 Slices Bacon diced
1 Can Water Chestnut 1 Can Water chestnuts sliced
2 Teaspoons Cornstarch 2 Teaspoons Cornstarch Dissolved In
1/4 Teaspoon Salt 1/4 Teaspoon Salt (to taste)
1 Tablespoon Sugar 1 Tablespoon Brn. sugar packed
1 Onion 1 Onion sliced
1 Pound Green Beans 1 Pound Can French style green beans
1/4 Teaspoon Dry Mustard 1/4 Teaspoon Dry mustard optional
1 Tablespoon Vinegar 1 Tablespoon Vinegar (I use lemon juice)
3 Tablespoons Pimentos 3 Tablespoons Chopped pimento

Directions:

1. In a skillet, fry bacon until crisp.

2. Remove, drain and crumble. Add onion and chestnuts to bacon drippings and saute until onion is golden, stirring frequently.

3. Drain beans, reserving 1/2 c. liquid. Combine bean liquid, cornstarch, salt, mustasrd, brown sugar, vinegar.

4. Add to skillet. Cook, stirring constantly, until mixture thickens.

5. Add green beans and pimento, heat through. Serve garnished with crumbled bacon.
