Sweet and Sour Stir-Fry with Chicken

Simple yet delicious recipe. Everyone loves sweet and sour chicken and this recipe is great. Boneless skinless chicken with the assorted vegetables also makes this recipe healthy. The sauce makes the chicken so tasty yet not spicy or hot. So the kids will love this too.

Ingredients:

1 tablespoon Vegetable Oil
1 lb Boneless Chicken Breast skinless
8 oz Canned Water Chestnuts sliced and drained
1 cup Bell Pepper strips red
1/4 cup Onion chopped
2 tablespoons Cornstarch
2 tablespoons Soy Sauce
1 tablespoon Vinegar white
8 oz Canned Pineapples undrained chunks of
1/4 teaspoon Ground Ginger
1/4 teaspoon Salt
1/4 cup Artificial Sweetener
6 oz Pea Pods package frozen

Directions:

1. Heat oil in wok or skillet.

2. Add chicken.

3. Cook and stir 5 to 6 minutes or until chicken is no longer pink. Remove; set aside.

4. Add water chestnuts, pepper and onion to wok.

5. Cook and stir 3 to 4 minutes or until vegetables are tender.

6. Dissolve cornstarch, soy sauce and vinegar in small bowl.

7. Add pineapple with juice, ginger and salt. Stir into vegetable mixture.

8. Cook 2 to 3 minutes or until sauce thickens, stirring constantly.

9. Stir in artificial sweetener.

10. Add pea pods and chicken.

11. Cook 2 to 3 minutes or until pea pods and chicken are heated through.
