Tomato Basil Quiche

Ingredients:

1 Tablespoon Extra Virgin Olive Oil
1 1/2 Cups Milk cold
6 Eggs large
2 Onions medium chopped
2 Tomatoes medium chopped
1 Cup Basil fresh chopped *
1 1/2 Cups Cheddar Cheese grated

Directions:

1. Bake crust 5 minutes at 400.

2. Lower heat to 350. Saute onion and tomato until onion is soft.

3. add basil and cook until wilted. Remove from heat, set aside.

4. Beat eggs and milk together, set aside. Spread vegetables in crust, add grated cheese, pour milk mixture over, stir slightly.

5. Top with cheese slices. Bake 45 minutes, or until set and crust is golden.
