Ingredients:

450 Grams Tomatoes peeled,seeded,cubed
450 Grams Granny Smith Apples peeled, chopped (1 1/3 cups)
225 Grams Onions sliced thin and
600 Millilters Chicken Stock boiling

Directions:

1. Place the tomatoes in boiling water for 2-3 minutes then in cold water.

2. The skins will peel off easily. Cut up the tomatoes.

3. Peel and cut up the onions and apples. Place the tomatoes, onions and apples with the stock in a saucepan.

4. season. Bring to the boil and simmer for 20 minutes until the onions are soft.

5. Puree the mixture and then sieve to remove the tomato pips.

6. The soup should be completely smooth. serve hot garnished with chives and cream or chilled.
