Tomato and Orange Soup

Ingredients:

1 Onion finely chopped
1 Clove Of Garlic finely sliced
3 Tablespoons Vegetable Oil 45 Ml
400 Grams Canned Tomatoes chopped
1 Orange rind grated
150 Millilters Orange Juice chilled
600 Millilters Vegetable Stock

Directions:

1. Soften the onions and garlic in the oil over a low heat for 6-8 minutes.

2. Stir in the tomatoes with the juices from the can and the orange rind.

3. Heat through, mixing well, and simmer for 3-4 minutes.

4. Liquidize in the blender with the orange juice, then return to the pan.

5. Heat through, adding the stock as you stir the soup.

6. Season to taste and simmer for 5 minutes before serving.
