Tropical Dried Fruit Salad

Ingredients:

1 Stick Cinnamon
1/2 Pint Pineapple Juice
3 1/2 Ounces Dried Apricots
2 Ounces Dried Prunes
2 Tablespoons Coffee
2 Ounces Bananas dried
2 Ounces Mangos dried
2 Ounces Pineapples dried

Directions:

1. Put all the fruit into a large saucepan and cover with the pineapple juice.

2. Add the cinnamon stick and bring to the boil.

3. Simmer for 15 minutes or until the fruit is soft.

4. Leave to cool for at least 1 hour.

5. Add coffee liquer and reheat gently.

6. Transfer to a sealed container and leave for several hours to enrich the flavors.

7. Serve with a spoonful of low-fat fromage frais or low-fat yoghurt.
