1. Blend flour, salt and pepper, spread on a plate (feel free to add other spices if you wish, thyme is nice).
2. Dredge tuna in flour mix. Heat sauce pan to with butter and oil.
3. Sear tuna on both sides, cook through to desired level (for this dish, I actually prefer the tuna cooked to medium as opposed to rare).
4. Once nicely browned, add wine and lemon juice.
5. Allow liquid to reduce slightly and become opaque, add more wine if you prefer more sauce.
