This is a great recipe for an anniversary dinner or other special occasion, since veal can be a bit pricey. This entree is basically veal cutlets in a simple mushroom pan sauce served over rice.
1. Melt butter with oil in large skillet over medium-high heat.
2. Add veal and brown, turning once. Transfer to platter.
3. Add brandy and shallots to skillet and stir, scraping up any browned bits clinging to bottom of pan.
4. Blend in soup and milk. Return veal to pan with apple.
5. Reduce heat and simmer stirring once or twice, until heated through.
